Have you ever wondered what is this "figgy pudding" that the carolers are singing about in the song "We Wish You a Merry Christmas?" Well about 5 years ago sitting by the fireplace listening to that song, it got the best of me. I went online and was surprised to learn that it is an actual dessert made of figs and dates. I found a recipe and made it for my family on Christmas Eve. Everyone was blown away at how delicious this was, myself included. My 14 year old son demanded that I make it every year. A new family tradition in our house was born.

Figgy Pudding goes back hundreds of years and is more popular in the U.K. Many desserts in that region are referred to as "puddings", so it is not the type of pudding that we are accustomed to here is the US. It's more like a cake, consisting of figs & dates, orange zest, spices , flour, sugar and dark chocolate, then topped with a caramel sauce. It was originally steamed but my version is more modern and uses an oven. Everything in the kit is shelf stable and does not require refrigeration.
